Creamy “Beefy” Mac and Cheese

Hey Amazing Moms!

Raise your hand if you need a quick, easy and delicious dinner recipe that the entire family will enjoy. I haven’t found a kid that doesn’t like macaroni and cheese, so this recipe is a guaranteed winner!

macNcheese1This one is seriously plate licking good (yes, I said plate licking…don’t judge me). Serve this little bit of heaven up with fresh steamed veggies on the side and consider yourself a culinary goddess!

Ingredients

 2 Cups Elbow macaroni noodles

3 Cups shredded cheddar cheese

1/2 tsp  onion powder

1/4 tsp sea salt

1 tbs extra virgin olive oil

 1/4 cup diced onion

2 tbs flour

2 tbs butter

4 cups water

For the “beef”

1 Cup Textured Vegetable Protein

(Wait, don’t get freaked out! TVP is used as a vegetable based protein filler in many meat products and can be found in the health food section of your local grocery store. Bobs Red Mill brand TVP is available in most grocery stores.)

1 tbs beef bouillon powder

1/2 tsp black pepper

1 tsp minced garlic

1 tsp liquid browning

(found in the Spanish or Caribbean section your grocery store)

1 1/2 cups of water

1 tsp salt

1 tbs extra virgin olive oil

Directions

Rehydrate the TVP. Soak the TVP in a broth of 1 1/2 cups of water, beef bouillon, salt and black pepper and let it sit for 20 minutes.

Boil the four cups water for the macaroni noodles and sprinkle some sea salt in the water. When the water comes to a boil, pour in the two cups of macaroni and cook until soft then strain.

Place a small sauce pan on medium heat with one table spoon of olive oil. Add the two table spoons of flour and whisk. When the flour, oil and seasonings begin to bubble, add 2 cups of water and whisk until the flour and oil are dissolved. Add 1 tsp of seasoning salt, and  1/2 tsp of garlic powder to the mixture and let it simmer until it thickens. When the mixture begins to thicken, add two cups of shredded cheese and whisk until smooth.

In a frying pan on medium heat, add 1 tbs olive oil and garlic. Saute until soft. Add the re hydrated TVP and saute until liquid is absorbed. Add the liquid browning and saute until evenly distributed.

Pour the cheese sauce into the macaroni. Add the sauteed TVP and the remaining one cup of shredded cheese. Stir well. Serve while still hot and enjoy!

    Ooey-gooey good! My kids LUV MAC N CHEESE! Must try! I’m coming back home Sis! I’ve been pescetarian-AGAIN! For 2 months and counting-my goal is RAW VEGAN-Lawd help me… baby steps! LOL! 🙂
