Hey Amazing Moms!
Anyone in the mood for some homemade Chinese inspired deliciousness! Im always on the look out for a side dish especially one that goes well with tofu. You don’t need to spend money and time searching for fancy ingredients to make this awesome, healthy egg fried rice. Here’s what you will need to make this mouth watering side dish.
2 tbs vegetable oil
2 cups jasmine rice
3/4 cup chopped green onions
1 cup chopped red/purple onions
1tsp minced garlic
1tbs soy sauce
1 tsp sea salt
3 cups of water
1 tsp sirarcha sauce
Add 1 tsp of sea salt to the water and alllow to boil. Add your rice and turn the stove down to medium/low heat. Keep the pot covered and allow the rice to cook for 30 minutes or until tender.
Scramble the two eggs on medium heat with a little bit of vegetable oil and season to your preference with salt and pepper. Make sure to watch and continuously stir the eggs so that the eggs are well scrambled with minimal clumping.
Add your vegetable oil, scallions, red onions, and minced garlic to a frying pan and allow the vegetables to sauté until tender. Add your cooked rice to the pan and mix well. Add the scrambled eggs to the rice as well as the soy sauce and the sirarcha sauce. Sauté until well combined.
Serve this rice with steamed broccoli and your favorite protein (I prefer teriyaki tofu or thai inspired curry pineapple “chicken”; pictured above) and you will have a healthy option to Chinese take out at a fraction of the cost.
