Ever consider cooking a vegetable, but have no idea how to prepare it? Asparagus an be an intimidating vegetable. Some love it, but have difficulty preparing it in a way that is palatable. Being that asparagus is such a healthy vegetable, and goes well with a variety of meals, its a shame that some are intimidated by it. Asparagus is a delicious, nutrient filled vegetable packed with cancer fighting agents and antioxidants. It’s also a natural age fighter…you heard right, asparagus slows the process of aging (yes honey!).
When preparing asparagus, I’ve found that the more simple the recipe, the better. This recipe makes crisp, slightly tender asparagus that is soft enough to sink your teeth into with a crispy center. Mildly spicy and so flavorful. Here is my no fail, always delicious Roasted Cumin Asparagus recipe.
One bunch of fresh asparagus washed and trimmed
1 1/2 teaspoons of fine sea salt
1/2 teaspoon of ground black pepper (optional)
1/2 teaspoon cumin powder
1 1/2 tablespoon of extra virgin olive oil
Pre-heat your oven to 350 degrees fahrenheit. Thoroughly wash your asparagus and chop 1 1/2 inches off the bottom of each stem. Place your asparagus on a backing sheet. Combing the olive oil, cumin powder, black pepper, and sea salt in a separate bowl and whisk. Pour your marinade over your asparagus and spread evenly, making sure each stalk is coated. Bake the asparagus for 10-12 minutes. Remove and allow to cool.
I like serving my asparagus with Jamaican jerk style salmon and savory yellow rice. My kids love this recipe and usually finish the asparagus before touching anything else on the plate!
