Vegetarian Breakfast for Dinner Casserole

Who doesn’t like breakfast for dinner? This breakfast for dinner casserole was a huge hit with my family and I know you will love it too…afterall whats not to like about eggs, cheese biscuits, ground meat and hash browns combined?  Yummmmm!

Ingredients

Some of the ingredients pictured were used to make the vegetarian ground beef. That recipe is not available at this time. Instead, you can use a pre-made vegetarian ground beef by Morning Star Farms available at most grocery stores.

1  1/2 cups of ground vegetarian meat.

I’ve used “Veggie Crumbles” by Morning Star Farms that you can find at most grocery stores. You can also use regular ground beef…just make sure to drain it really well after cooking it.

1 Medium bell pepper chopped

1 medium red onion

2 stalks of scallion chopped (for garnish)

6 small red skinned potatoes diced into small cubes

2 cups shredded cheddar cheese

1 cup of bisquick or baking mix

1 1/2 cup of milk

4 eggs

3 tbs extra virgin olive oil

Garlic powder

salt and pepper

Directions

Combine diced potatoes, 1 1/2 tbs of extra virgin olive oil, salt, pepper and garlic powder on a baking sheet. Bake potatoes for 30 minutes at 400 degrees fahrenheit or until tender.

Sauté your onion and bell pepper in the remaining oil and add your ground meat.                                                                      Season with salt, pepper and garlic powder to your liking.

Wisk eggs, milk, bisquick until well combined.

When your potatoes are finished cooking, transfer to a 13x9x2 baking dish. Add the meat, onions and bell peppers and mix well. Pour your egg mixture over the the potatoes and meat. Add 1 1/2 cups of shredded cheese and mix well. Reserve 1/2 cup of cheese to add later.

Bake uncovered on 400 degrees fahrenheit for 40 minutes. Add remaining 1/2 cup of cheese and chopped scallions and return to oven for a few minutes until cheese is melted.
